└chicken bone soup stock (powder, cube or paste) | 1/2 teaspoons |
seasoning | |
├soy sauce | 1/2 tablespoons |
├Shaoxing wine | 1/2 tablespoons |
├sugar | 1/2 tablespoons |
└oyster sauce | 小さじ2 |
watered katakuri starch | adjust to suit your needs |
vinegar | 1/2 tablespoons |
sesame oil | a few drops |
hot sesame oil | dash |
oil for frying | adjust to suit your needs |
Recipe
Mince ginger,garlic.
Shred the Japanese leek and expose it water. Then put it up to a colander and drain with kitchen paper. This is called Siraganegi in Japan.
Cut the eggplant into bite-size pieces.Soak the eggplant in water and take an accession.
Deep fry the eggplant(Deep fry twice).
Take it out as a biscuit.
Mix the ingredients of Chinese soup.Mix the ingredients of the seasoning.
【Make to mapo-sauce 7~9】
Heat salad oil in frying pan.Put ground pork and stir fry.
Add ginger,garlic,douban jiang and stir fry.
Pour Chinese soup and the seasoning.
Stir together all ingredients and add the eggplant.
Thicken with watered katakuri starch.
Season with sesame oil,hot sesame oil and vinegar.
Serve in a bowl and sprinkle Siraganegi on.
